Tomorrow is the last day of July. That means August has just about arrived, knocking at our front door, begging to come in and stay awhile. This summer has flown by and somehow, I knew this would happen. There are so many fun things to do over the summer, from swimming, vacations, bike-riding and playing outside till the sun goes down to amusement parks, day trips and ice cream; lots of ice cream.
Some of my favorite summer things, other than playing with my kids and quality family time, are the summer fruits and veggies that can turn any meal or bbq into a food blogger’s dream come true. If you know me, then you have heard me go on and on about my love, err obsession, with strawberries. I also am obsessed with all things peaches, nectarines, sweet corn and tomatoes! Ohhhh summertime isn’t complete without a few heirloom tomatoes, the uglier the better!
Let’s talk about those heirloom tomatoes (those ripe, ugly tomatoes)! I used several different color variations in this pizza…because, well, let’s face it…I eat with my eyes. If it’s pretty, I’m probably going to want to devour it. I used 3 heirloom tomatoes; 1 purple, 1 red(ish) and 1 yellow. They were fairly soft to the touch, but still had some bounce to them.
So, how did I come up with this easy, kid-friendly, family approved, Tri-Color Caprese Pizza? I was shopping for the week at our local grocery store and was just inspired when I saw the great assortment of heirloom tomatoes. My hubby and I are obsessed with caprese salad, so this was a no brainer once the tomatoes caught my eye. But, I have a little secret. A little something extra…a star of the pizza (as if I needed another, right?). Sweet basil pesto. Yup! You read that correctly. Underneath it all; underneath those beautiful tomatoes and yummy fresh mozzarella is none other than a pizza crust slathered in pesto. I topped the pizza with a dash of balsamic glaze which added a slight tanginess to the pizza in all the right spots. SO. DARN. GOOD.
Now, let’s chat about the taste. This Tri-Color Caprese Pizza tastes freaking amazing. It’s has all the wonderful flavors of the ripe, slightly salted tomatoes mixed with the creaminess of the melted mozzarella and the sweetness of the pesto. This pizza is just all sorts of heaven.
Tri-Color Caprese Pizza incorporate all your favorite things from a traditional caprese salad along with some sweet basil pesto all on top of delicious pizza crust.
- 3 Heirloom Tomatoes Cut into thin slices
- 2-3 Tbsp Sweet Basil Pesto I used Dellalo
- 5-6 Balls Fresh Mozzarella
- 1 Pizza Crust
- 5-6 Leaves Basil Roughly chopped
- Balsamic Glaze
- Salt To Taste
- Olive Oil Spray
Set the oven to 400 degrees
Place your pizza crust onto a pizza stone or cookie sheet.
Lightly spray your pizza crust with olive oil. Then spread the pesto over the pizza crust, keeping about an Inch perimeter around the edge of the pizza free of pesto.
Lay your tomatoes on the pizza, varying the colors around the pie.
Lightly sprinkle the tomatoes with salt (to taste). Add the mozzarella balls, randomly over the pizza, still keeping that 1 inch perimeter around the edge.
Bake for 25 minutes or until the edge of the pizza has browned nicely.
Top the pizza with the roughly chopped basil. Drizzle the balsamic over the pizza, to taste. Serve immediately.
