Sweet Potato and Goat Cheese Bites
Well, hello there September! We are on the cusp of my favorite season. If it wasn’t obvious in every post I’ve written in the last month, I’ll scream it from the rooftops one more time: I love FALL!!!! Whoooo hooo. Today was one of those days that felt cool and crisp and made me think of Autumn: I loved every moment of it.
So, I’m still testing out lots of comfort foods that are scrumptious and perfect throughout the entire season. Some of my favorite Fall recipes thus far are Lanc’s Best Pumpkin Bread, Slow Cooker Apple Pie a la Mode and Tasty Butternut Squash Chili. They all have something in common: comfort food. Isn’t that what you want when there’s a chill in the air and the leaves start to change to the beautiful hues of red, orange and yellow? I know there is nothing I want more than to turn the fireplace on, get cozy on the couch under a warm blanket and dig in to a comforting dish.
This inspired me to develop Sweet Potato and Goat Cheese Bites. These babies are every bit comfort food and cool, tasty appetizer combined into one. They have all the hues of those stunning leaves that are about to start changing and are perfect for your next Fall gathering, football party or holiday dinner. They are just too easy and simple to be this heavenly and this gorgeous.
The flavor combination on these dreamy little sweet potato wedges blends together perfectly. The crispy outer edges of the sweet potatoes alongside the warm, creamy center is the perfect base to build upon. Among the different flavors, they are topped with honey chèvre and dried cranberries; these magical rounds hit all the right notes. Sweet Potato and Goat Cheese Bites NEED to be on your table this Fall season.
- 1 Tsp Salt
- 1/2 Tsp Paprika
- 2 Tbsp EVOO
- 4 oz Goat Cheese I used honey infused goat cheese
- 1/3 Cup Dried Cranberries
- Balsamic Glaze
- 2 Tbsp Honey
- Zest of 1 lemon
- Basil Roughly Chopped
- 2 Medium Sweet Potatoes
Pre-heat the oven to 450 degrees. If your oven has an option to Roast, use that option. Otherwise, Bake works just fine.
In a small bowl, whisk together the ingredients for the glaze. Set aside.
Peel the sweet potatoes. Cut them into 1/4 inch thick rounds. Brush the glaze mixture over both sides of each potato round.
Place the rounds on a baking sheet so that they are not touching. Roast for 10-12 minutes, or until the outer edges are browned and crispy looking.
Transfer the rounds to a serving platter. Smear a dollop of goat cheese on to each bite.
Top the rounds with several dried cranberries and a little lemon zest. Right before your guests devour these delectable bites, top with a drizzle of honey, balsamic glaze and a little chopped basil. Serve immediately.
