Peanut Butter Cookies
I love cookies! (You know you do too!) I love all different kinds of cookies: Chocolate Chip, Chocolate Chunk, Shortbread, Honey Raisin Chews, Butter Cookies and Peanut Butter Cookies, to name a few. I try not to discriminate when it comes to cookies.
A perfectly delicious treat; cookies work any time of year making a great housewarming or holiday gift. They are one of those timeless baked goods that don’t depend on in-season ingredients. Cookies span all generations wowing kids and adults alike. So, what are your favorite cookies? Do your favorite cookies remind you of a memory shared with family or friends?
One of my favorite cookie memories is baking cookies with my mom during the holidays. She would keep me home from school for a day and we would bake Hanukkah Cookies. I loved rolling up our sleeves, putting on our aprons and watching that all-purpose flour hit the kitchen table. We rolled the dough together and used fun Hanukkah cookie cutters to make sand tart cookies. Now that I have two little munchkins of my own, I love nothing more than trying to recreate these memories from my childhood.
Recently, my 5-yr old spent some time in the kitchen with me and we whipped up a batch of my Peanut Butter Cookies. At first, he was a little disappointed to find out these rich and chewy cookies contained no chocolate. However, after a little bit of mess and a lot of fun, we took our cookies out of the oven to let them cool ever so slightly. Just for him, I melted some chocolate and we dipped a few of them in for extra-added yumminess. My guy was in cookie heaven.
These Peanut Butter Cookies are so simple to make, bake and serve; this recipe will have you head over heels loving these cookies. I used equal parts sugar, butter and flour to get a chewy cookie that is slightly crisp on the outside, but soft and chewy on the inside. I love watching these Peanut Butter Cookies puff up in the oven and then settle after they come out to cool. I just can’t take my eyes off it. Serve these cookies warm or cool, dipped in melted chocolate or plain and simple; they are a perfect after-school snack or treat for your family.

- 1 Cup All-Purpose Flour
- 1/2 Cup Brown Sugar
- 1/2 Cup White, Granulated Sugar
- 1 Cup Unsalted Butter Softened
- 1 Egg
- 1 Tsp Vanilla Extract
- 1 Tsp Baking Soda
- 1/2 Cup Creamy Peanut Butter
- Pinch of Salt
Preheat the oven to 350 degrees.
In a medium mixing bowl, cream the soften butter and the sugar together until evenly mixed.
Add the the vanilla and egg and beat together.
In a separate bowl, use a fork and mix together the flour, baking soda and salt.
Slowly add the flour mixture to the wet ingredients and mix together thoroughly. Once mixed together, add the peanut butter.
Refrigerate the batter for at least 30 minutes. Line a baking sheet with parchment paper. Using a small spoon, scoop out batter and roll into a ball. Cookie batter balls should be evenly spaced on the cookie sheet. Bake for 12 minutes or until cooked to your preference.
Serve warm or cool.
Other options: Melt chocolate and dip cooled cookies into chocolate. Refrigerate until chocolate is hardened.
