Morning Glory Breakfast Frittatas
A new year, a new me! Yaaas! You got it. I started working on a little something here in the new year: me, myself and I. I’m not typically a new year’s resolution type gal. I don’t like to set expectations that I can’t or won’t keep, but, with all the baking, cooking, eating, parties, dinners, outings and plain old NEEDING comfort food; well, you get the idea. It’s time for a change. So, here’s to being hopeful. Here’s to determination. Annnnd, here’s to kicking some butt in the new year.
As part of my new year, new me thing I’ve embarked upon in 2018, I signed up for Weight Watchers. I’ve used their online services in the past when I needed a jumpstart in my diet. I love the Weight Watcher’s mantra of eating what you want, when you want; just all in moderation.
These Morning Glory Breakfast Frittatas are easy to make, oh-so healthy and perfect start to my day! At only 2 Smart Points, these yummy Morning Glory Breakfast Frittatas pack a punch. I used turkey sausage, veggies and a little cheese to make these little breakfast miracles. I love that I can meal prep these bad boys ahead of time and then grab one in the morning as I’m running out the door and easily heat it up at work for a savory breakfast meal. And, the best part? (In my humble opinion.) These tasty frittatas can be customized for whatever your family desires. Whatever floats your boat.
You can pair these Morning Glory Breakfast Frittatas with just about anything: whole wheat toast (with or without avocado), greens or fruit. These frittatas are my family’s go-to breakfast choice in 2018. Start your day with these Morning Glory Breakfast Frittatas and the rest is just gravy… (super light skinny no calorie gravy).
- 1 Egg Scrambled
- Mexican Blend Cheese A pinch
- Diced Tomatoes
- Diced Peppers
- Diced Turkey Sausage
- Salt and Pepper To taste
- Non-Stick Spray
Preheat the oven to 350 degrees.
Spray your muffin tin with the non-stick spray.
Crack the egg over a bowl. Add a pinch of salt and pepper. Which together with a fork.
Add turkey sausage, tomatoes, peppers, onions and cheese to the muffin tin. Pour the egg mixture in the muffin tin.
Bake for 20 minutes or until a toothpick comes out clean.
Eat immediately or refrigerate up to 6 days. (I suggest making no more than 6 at a time - one for each morning).
- Tomato, onion, spinach
- Feta, tomato, olive and spinach
- Mozzarella, tomato and basil
- Turkey sausage and American cheese (for the kiddos!)
- Turkey bacon, tomato, green pepper and Mexican blend
Add salsa or sriracha sauce for added kick!
