Lancfoodiegirl is a big part of my life and a big passion of mine. It brings together several passions that are near and dear to my heart: cooking and photography. Aside from Lancfoodiegirl, my other passion is my family; my husband, Chris, and our two boys. Our boys sure do keep us on our feet. My 5 year old, who is starting kindergarten, loves to be in the kitchen with me. His favorite food to cook? Cookies. He is also a cookie eating machine! I love that he wants to be in the kitchen with me, throw on an apron and get his hands dirty in flour, sugar and lots of chocolate.

So, this week, my 5 year old was my special guest chef in the kitchen, helping me whip up Lanc’s Best Pumpkin Bread. I was able to satisfy his sweet tooth by offering to add a few chocolate chips (alright, maybe it was more like a cup) to the second loaf we baked. But, chocolate or not, we had a blast together. Although it was a little more messy than usual, we laughed and giggled our way through making Lanc’s Best Pumpkin Bread.

Lanc's Best Pumpkin bread is perfect for a breakfast treat, after-school snack or your next Thanksgiving feast.

INGREDIENTS
  • 2 Cups Flour All Purpose
  • 1/4 Tsp Salt
  • 1/2 Tsp Baking Powder
  • 1 Tsp Baking Soda
  • 1 Tsp Ground Cloves
  • 1 Tsp Ground Cinnamon
  • 1 Tsp Nutmeg
  • 2 Cups Sugar
  • 1 1/2 Sticks Unsalted Butter Softened
  • 2 Eggs
  • 1 15 oz Can, Pumpkin Puree
INSTRUCTIONS
  1. Preheat oven to 325 degrees. Generously grease 2 bread loaf pans.  I use a baking spray that has flour in it.  

  2. Mix together the flour, salt, baking powder and baking soda.  Set aside

  3. In a separate bowl, cream together the butter and sugar.  

  4. Add the eggs and mix well until fluffy.  Mix in the pumpkin puree until well blended.  

  5. Next, add the flour mixture, slowly, beating together until well blended.  Pour evenly into pans.  Bake for 65-75 minutes or until a toothpick comes out clean.  

RECIPE NOTES

Browned Butter Cream Cheese Icing:

  • 1/2 brick of cream cheese
  • 1 tbsp of vanilla
  • 2 tbsp of unsalted butter
  • 1 cup of confectioner's sugar

Melt the butter over a medium heat.  Keep staring until the butter browns.  Add the vanilla.  Take off the head and carefully pour into a bowl.  Add the cream cheese and beat together in a mixer.  Slowly add sugar and continue to beat together until light, creamy and fluffy.  Spread over completely cooled pumpkin bread.
