Ohh Emmm Gee!!!! (That is me screaming with excitement, if you couldn’t tell.) I’m so freaking excited for this little (I mean huuuuuge) present that was waiting for me when I got home from work. I saw a sale on Amazon and knew right away this puppy had to be mine.
I’ve been wanting an Instant Pot for so long now, but with the kitchen renovation a few months ago, I knew I had to wait until everything was complete. And, complete it is! I ordered this about a week and a half ago and couldn’t be more excited to get my hands on it.
Don’t get me wrong, I love love love my slow cooker. I have used it hundreds of times, and for the most part, it doesn’t disappoint. Sometimes the recipe disappoints, but rarely the slow cooker. So, what’s my beef with my slow cooker you ask? The time!!! Who has time, right? No matter if you are a working woman or a momma who works at home, time is precious. Whether its meal prepping over the weekend or just making a meal, if I don’t get the ingredients in exactly at the right time in advance of dinner, I will have 2 crazy, ravenous kiddos on my hands. And I NEVER want that from my kiddos.
Actually, I’m lying. Time isn’t the only thing that bothers me with my slow cooker. In addition to the time it takes to cook most meals, so many recipes, good recipes, call for browning the meat. I don’t know about you, but a) who has time for that? b) I don’t like dirtying a gazillion dishes for one meal. So, what have I been doing with those recipes? Skipping right over them. If we are lucky, I save them for the weekend, but usually, I skip right over them and move on to something far easier. And, there are so many good recipes I NEED to try.
So, enter the Instant Pot. I made my Pizza Soup earlier this week. Check the blog for the recipe (and pictures). Tonight, I’m making Teriyaki Meatballs over Rice….In the Instant Pot. Stay tuned for pictures and my review.
