Although the hardest job I’ve ever had was being home on maternity leave (both times), I currently work in corporate America; banking to be exact.

Growing up, I dreamt of being a teacher (mostly because I liked to grade pretend homework), sometimes a lawyer and even sometimes a doctor. Going into college, I thought my dream career was journalism and coming out of college I dreamt of being a career woman in the world of public relations and advertising.

Somewhere along the way, I moved back home to Lancaster and wandered into banking. Yup. Me, the girl who stopped liking math somewhere around 9th grade and realized my love of writing. There I was, smack dab in the middle of the banking world surrounding by calculators and excel spreadsheets.

But, even with those “banker’s hours”, I’m a busy mom food blogger looking for easy, fast yet tasty meals, most nights of the week. This Instant Pot Chicken Tikka Masala is just that: easy, simple, flavorful and most importantly, quick! That’s right – another Instant Pot (affiliate link) dish that’s high on taste, visually appealing and so versatile. It can be served over white, brown or even cauliflower rice. It can be eaten with naan bread or over zucchini noodles. Whether you use chicken breast or chicken thighs, the wonderful thing about the Instant Pot is that your meat turns out nice and juicy every time. In this dish, I used my Instant Pot to sauté the marinated chicken. That is probably the biggest reason I purchased an Instant Pot – sautéing meat. This is a one pot dish and let’s face it – we love that, right? Those spices though…the spices really take this dish to the next level of yummy; most notably, the cayenne pepper. It adds just the right amount of heat. For our meal, I served the chicken over white rice and sprinkled cilantro for a garnish. However you serve this Instant Pot Chicken Tikka Masala, you won’t be disappointed!

This Instant Pot Chicken Tikka Masala recipe is a one pot dish that is simple, easy and so versatile. Serve it white, brown or cauliflower rice, naan bread or even zucchini noodles.

INGREDIENTS
Marinating the Chicken:
  • 5 Boneless, skinless chicken thighs chopped into bite-size pieces
  • 1 Cup Plain 2% fat Greek Yogurt (I used Fage)
  • 1 Tbsp Garam Masala
  • 1 Tbsp Lemon Juice
  • 1 Tsp Black Pepper
  • 1/4 Tsp Ground Ginger
Sauce:
  • 15 oz Can, Tomato Sauce
  • 5 Cloves Garlic Minced
  • 4 Tsp Garam Masala
  • 1/2 Tsp Paprika
  • 1/2 Tsp Tumeric
  • 1/2 Tsp Salt
  • 1/4 Tsp Cayene Pepper
  • 1 Cup Heavy Whipping Cream
Garnish:
  • White, Brown or Cauliflower Rice
  • Naan Bread
  • Fresh Cilantro
INSTRUCTIONS
Marinating the Chicken
  1. In a medium bowl, combine all the ingredients under this list, except the chicken. Mix well.  Add the chicken and ensure it's completely coated.  Refrigerate for at least an hour. 

Saute
  1. To cook the chicken, select the sauté mode on the Instant Pot and use medium heat.  When it has reached the desired temperature, add the chicken and any leftover marinade and cook until the chicken is browned.  Stirring occasionally, this will take approximately 5 minutes.

Pressure Cook
  1. Add all of the ingredients for the sauce, except the heavy whipping cream.  Stir the sauce ingredients and the chicken together.  Place the lid on the Instant Pot and lock.  Select manual mode for 10 minutes at high pressure.  When finished, use the quick steam release to release the steam.  

To Finish
  1. Select the sauté mode on low heat.  After the Instant Pot reaches the desired temperature, add the heavy whipping cream and stir.  Simmer until the sauce thickens to your preference.  This should take just a few minutes.  

Garnish
  1. Serve over your favorite rice selection or Naan Bread.  Sprinkle fresh cilantro for extra flavor.
