Goat Cheese and Strawberry Bruschetta

HAPPY MEMORIAL DAY!!!!

I hope everyone had an amazing weekend spent with family and friends, yet still carve out a moment to remember our troops along with their families, who are sacrificing so much so that we can live in peace.

My family had an All-American weekend.  On Saturday we took my oldest to a Phillies game.   Watching the game and seeing the sights through his eyes makes it that much more special.  He loves going to the “big city,” seeing sky scrappers, the lights and of course, going to the stadium.  This game, in particular, was extra fun, because after the game, all the kiddos were invited back into the stadium to run the bases while the parents took endless videos and pictures.

On Sunday, we rounded up both kids early in the morning and went to Hershey Park.  We were Hershey Park happy, indeed.  My oldest kiddo rode the Super Duper Looper for the first time.  If you have ever been to Hershey Park, then you know what a big deal this is for kiddos.  I can always tell when my babies have a blast because the water works begin as soon as we head for the exit.  Sunday was no exception.   What a fun time!

Today was a lazy, overcast day.  Family stopped over at our house for some quality time together.  Here is a quick and easy appetizer I made for today’s BBQ.

GOAT CHEESE AND STRAWBERRY BRUSCHETTA

RECIPE

INGREDIENTS:

  • Goat Cheese
  • Baguette Bread, sliced into 1/4 inch rounds
  • Strawberries, sliced thin
  • Balsamic glaze
  • Basil, roughly chopped

DIRECTIONS:

  1. Preheat the oven to 350 degrees.
  2. Pop the rounds of baguette bread into the oven for 5-6 minutes.
  3. Once they are out of the oven, spread your goat cheese over the round.
  4. Top it with 1-2 strawberry slices (or as many as your heart desires).
  5. Drizzle the balsamic glaze over your baguette and top with basil.  Serve immediately.

Voila!!!  It’s that easy.  Your guests will be so impressed. You could also try this will sliced peaches, in season.  Next up, I think I’ll try this as a whole pizza. Yum!  Drop me a line and let me know what you think of the Goat Cheese and Strawberry Bruschetta!
