Fudgy Flourless Peanut Butter Brownies
Sometimes you develop an amazing recipe that not only tastes freaking awesome, but looks amaze-balls in pictures as well. Sometimes…the stars align. And, sometimes, you see a recipe online or in a magazine; someone else’s recipe, and you just know you’ve got to get your hands (and taste buds) on it asap! That very thing happened to me the other day.
I was just sitting at work, eating my lunch, perusing Facebook, when I stumbled on Skinnytaste’s Flour-less Brownie recipe. I was intrigued. I was curious. And, well I was hungry!
You might remember my proclamation at the beginning of the year. My statement, to become healthier and happier, not only with the food I choose to eat, but with my body as well. My family joined the gym and I must say…I’m addicted. Like really addicted. I have been working out 3-4 and sometimes 5 times a week. Things I never thought I could do, like running again, are happening. I’m also mildly addicted and loving Zumba and Step classes. So much fun.
Back to the food. In addition to my fitness endeavors, the hubby and I are committed to eating healthier as well. So, when I stumbled upon this flourless brownie recipe (only 5 freestyle points), I knew I had to try it (over and over again!). You might be wondering what is so darn special or different about these deliciously fudgy brownies? Black Beans! It’s the magic ingredient. Yup. You read that right. Black beans, sugar, cocoa powder and a few other ingredients and you’ve got yourself the yummiest, fudgy-est brownies ever! They really are to-die-for.
These Fudgy Flourless Peanut Butter Brownies taste just as tasty and fudgy as the box brownie mix you grew up on. You won’t detect any black bean texture or taste in each bite; just ooey-gooey chocolatey fudgy yumminess hitting your taste buds. Whether you need something for a party or just a simple and easy treat for the family, these Fudgy Flourless Peanut Butter Brownies are a show stopper. Grab the recipe, plug in your blender and fire up that oven…these brownies are going to take your dessert game to the next level.
- 1 14oz Can of Black Beans Low Sodium
- 2 Large Eggs
- 1/2 Cup Cocoa Powder
- 3/4 Cup Sugar
- 1/2 Tsp Vegetable Oil
- 1 Tbsp Skim Milk (or Almond Milk)
- 1 Tsp Balsamic Vinegar
- 1/2 Tsp Baking Powder
- 1/2 Tsp Baking Soda
- 1/2 Tsp Freshly ground coffee
- 1/2 Cup Semisweet Chocolate Chip
- 1/2 Cup Peanut Butter Chips
Preheat oven to 350 degrees
Grease a 9x9 baking pan or a muffin tin. You can use parchment paper as well.
Blend the black beans, eggs, cocoa powder, sugar, oil, milk, balsamic, coffee, baking soda, and baking powder until nice and smooth. Pour into a bowl.
Fold in 1/2 of the chocolate chips and half of the peanut butter chips. Mix until well combined.
Pour the batter into your greased pan. Top the brownie batter with the remaining chips.
Bake the brownies approximately 32 minutes or until a toothpick comes out clean. Allow the brownies to cool completely before cutting and serving. They cut best if refrigerated first.
