Dream Dinners Part 2
Whew! This has been one heck of a week, and, as far as I can tell, it’s only WEDNESDAY!!! Oh. Em. Gee. So far, my oldest kiddo was home sick with a fever and a cold, I have been home sick with the worst (and my first) sinus infection ever and my husband is navigating a trial (no worries – he is not on trial, he took a case to trial)! To say this has been a crazy, busy, fever-filled week would be the understatement of the century!
I cannot think of a more perfect time to whip out a Dream Dinners of Lancaster meal to serve my busy (and sick) little family. This week we had our last two meals: Cucina Chicken Gnocchi and Southwest Pork Carnitas Wraps. Both meals were so tasty and yummy and couldn’t have come at a more perfect time.
First, we started with the Southwest Pork Carnitas Wraps. My whole family loved this meal. The meat was just perfect, the sauce was delicious and the toppings were the icing on the cake. The only change I made to this amazing freezer bag meal was to swap out the burrito wraps for taco size tortillas – easier for little hands to hold. We had enough to make leftovers the next day – for the win! These Southwest Pork Carnitas Wraps are the real deal – a total crowd pleaser.
Next, we tried the Cucina Chicken Gnocchi. Truth be told, I’m a real sucker for gnocchi. It’s just soooo yummy. When I saw this meal on Dream Dinners of Lancaster’s February meal list – it was love at first sight! Annnnnd, this dish did not disappoint. The melty cheese, the perfectly seasoned sauce, the chicken and ohhhh, that pasta. Did I mention my whole family (kids included) loved this too? Pair this with a salad and a nice glass of wine and dinner is served!
