Cranberry Orange Chicken Bake
A few years ago, before I got married, moved to the ‘burbs and had two of the most adorable kiddos around, I lived in Downtown Lancaster in a cute little row home close to center city. For six years, I hosted many friends and dinner parties. Of all the gatherings over those six years, one Passover dinner was my favorite dinner party of all.
I made all the Passover usuals such as Matzah Ball Soup and gelfite fish. I grabbed my mother’s Passover cookbook, Passover by Design, and made a few other special dishes, such as this Cranberry Orange Chicken Bake. I had not made this before, however, the combination of orange and cranberry was one of my favorite flavor combinations. Whether used in breads, baked oatmeal or smeared all over chicken, cranberry orange is a flavor winner and now Cranberry Orange Chicken Bake is one of my all-time favorite chicken recipes. Needless to say, this dish was a hit at my Passover dinner party.
This Cranberry Orange Chicken Bake makes an easy family dinner or works well for a holiday gathering dinner party. Using canned whole cranberries, this chicken bake is truly accessible year round. Simply combine whole cranberry sauce, onion soup mix, French dressing and orange zest and pour this liquid gold over your chicken. Pop it in the oven and voila, dinner is served. I plated the chicken and sauce over white rice which soaks up the sauce beautifully. Other options include brown rice, cauliflower rice or even vegetable noodles. - 2 Medium Oranges
- 6 Chicken Thighs Boneless, Skinless
- 1 16 oz Can, Whole Cranberries
- 1 Cup French Dressing
- 2 Tbsp Dry Onion Soup Mix
Preheat oven to 375 degrees.
Reserve the zest of 1 orange. Slice the orange.
Slice the second orange and place the orange slices evenly on the bottom of a roasting pan.
Evenly arrange the chicken on top of the oranges.
In a medium bowl, mix the cranberry sauce, dressing and onion soup. mix. Add the orange zest and mix thoroughly.
Pour the mixture over the chicken, coating all the pieces.
Bake uncovered for 1 1/2 hours. Serve over rice.
