Chocolate Chip Banana Cake

Banana Cake

Recently, I’ve been wracking my brain, trying to come up with some new and different tasty options for my little guys to get them healthy snacks and meal options. Sounds simple, right? I mean, c’mon…I’m a food blogger! This kind of thing is totally in my wheel house, right? Well…not so fast! Let me remind you what I’m dealing with: 2 boys…a sweet-tooth, pizza loving 5-year old and the world’s pickiest 3-year old! So, my goal: hide or disguise fruits and veggies in anything and everything! I’ve got a few tricks up my sleeve that have worked in the past! I like to give different dishes super hero names! For example, my Creamy Asparagus Soup is Hulk Soup to my 5-year old. My Creamy Tomato Soup suddenly becomes Iron Man Soup. See where I’m going here? Mom truth: IT WORKS!!

Even with these super hero dishes in our house, I’m always looking for something else. Something new to trick my kids, especially my super picky 3-year old. He takes picky to a whole new level; a level I was not prepared for! He eats a few fruits and almost no veggies. Fruit and veggie pouches have made a huge difference in getting him the nutrients he needs. But, being a home cook, someone who loves getting in the kitchen, I still wanted to find a way to get them something healthy, yet super delicious. Then, I remembered it!

Banana Bread

Chocolate Chip Banana Cake is an old family recipe and a staple at my mom’s house. She has been making it for years and it never disappoints! It’s great for breakfast, dessert or just a much-needed snack. It’s packed with fruit (bananas, duh!) so I can feel good about giving it to my kids, yet it can easily be whipped up for a party or family gathering.

And, did I mention? It’s a cake. Chocolate Chip Banana Cake. That’s right, you heard me! I said cake, not bread! Oh, and did I also mention that it’s simply delicious?  It has all the yumminess of banana bread, but it’s light and fluffy like a cake. This recipe is a great way to use those super ripe bananas that are just sitting around on your kitchen counter. This recipe can be made healthier by omitting the chocolate chips, but why on earth would anyone want to do that?? Am I right? You can also substitute plain or vanilla yogurt for the sour cream for a little added extra healthiness. Additionally, this cake can be made dairy-free by using non-dairy sour cream and parve chocolate chips. However you prefer it, this Chocolate Chip Banana Cake is nothing short of ahhmazingly delicious!
