Caprese Chicken

I got the idea for this dish from a friend and knew immediately I just had to give it a try.  It was so easy and packed so much flavor.  The hubs and I pretty much love anything “caprese”.  I just can’t get enough of the combination of balsamic vinegar, tomatoes, basil and lots and lots of mozzarella.  I think you could make this any time of the year, but there is just something about these flavors that screams SUMMER!  The only change going forward would be to add at least another 1/2 pint of tomatoes.
