Deliciously simple Butter Cookies that can be adapted for any occasion, holiday or gathering.   

Is it hot where you live?  It’s a scorcher here in Lancaster today!  Mid July in Lancaster means sunny, hot and tons of humidity.  It’s at this point in the summer where I start dreaming of Fall; my favorite season!  So, today, in the lovely air conditioning, I turned on my oven, and made Butter Cookies!!!

Here is why I love these cookies sooooo (you know it’s really serious when I use lots of “o’s”) much…they are just eat every last one delicious.  Annnnd…here is the other reason: you can decorate them for any season, occasion or holiday.  My secret?  The sprinkles!  (Do you say jimmies? I say sprinkles.)

Do you love Fall as much as I do?  Cool, crisp weather?  Football games, snuggly sweaters, light jackets, pumpkin everything, Halloween, Thanksgiving, back to school….I mean really, the list goes on.  These are just a few of the reasons, in no particular order, that I simple love Fall.

Butter Cookies

Soft and butter cookies that are easy to whip up and can be made for any holiday or occasion.

The sprinkles I used today are just a blend of wonderful fall colors…got me dreaming of warm days and crisp, cool evenings.  But, the great thing about my Butter Cookies, is that you can adjust the sprinkles to whatever you can find in your local grocery store that fits your occasion, season or holiday.  So versatile.

The back story on these cookies? My mom.  My mother used to make tons of cookie batter throughout the summer while she was home with me on summer break.  She would freeze the batter and then have it all winter long.  She often would make these Butter Cookies, and soon enough, they became some of my favorite cookies.  I’ve adapted her recipe into these delicious and simple cookies your whole family will love!

Butter Cookies

Deliciously simple Butter Cookies that can be adapted for any occasion, holiday or gathering.

Ingredients

Dry Stuff

  • 2 Cups All Purpose Flour
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 1 Cup Sugar

Wet Stuff

  • 1 1/2 Sticks Unsalted Butter Slightly softened
  • 1 Egg
  • 1 Tsp Vanilla

Instructions

  • Preheat oven to 375 degrees
  • In a large bowl, mix together all the dry ingredients, except the sugar. Blend well.
  • In a separate large bowl, cream the butter and sugar until it's light and fluffy.
  • Mix in the egg and the vanilla until well blended. Beat in a mixer for 3-5 minutes.
  • Slowly, add the dry ingredients until just combined.
  • Add your sprinkles and mix again. The amount of sprinkles depends on how much color you want to see in your cookies.
  • On a well greased pan, space a heaping dollop (about 1 tbsp's worth) onto your pan. You should fit nine dollops per tray. 3 rows of 3.
  • Bake for 12-15 minutes or until the edges of the cookies are slightly browned. Carefully transfer your cookies to a cooling rack.

Notes

Sprinkles:
You can use whatever variation or color combination is sold at your local grocery store. Typically, the color of the sprinkles depends on the season or upcoming holiday.
There is no set amount of sprinkles to use in your cookies. Keep adding them until you get the color pop you need.
