Blueberry Lemon Muffin in a Mug
Being a working mom of 2 boys, I’m always on the hunt for quick and easy food that looks and tastes like it came right out of a magazine, the like of which are Bon Appetit and Cooking Light. I want something where I have most, if not all of the ingredients in my fridge and cupboards. I eat visually, so if it’s not pretty, I tend to pass it by. So, in search of all things easy, quick and sweet (my sweet tooth has been calling!), I whisked up my Blueberry Lemon Muffin in a Mug recipe.

Buuuuut, if you really want to jump over the edge into all things delicious, then pop this mug in the microwave after dinner and top it with a large dollop of vanilla ice cream. Trust me, believe me, you won’t regret it! The hints of lemon pair perfectly with all the insanely delectable blueberry that managed to pop all through the mug, almost as ribbons of blueberry running through. Oh my heaven!
This Blueberry Lemon Muffin in a Mug is the perfect simple, easy and quick recipe for that special breakfast or dessert treat you are looking for to satisfy that sweet tooth.
- 1/4 Cup All-Purpose Flour
- 2 Tbsp Brown Sugar
- 1/4 Tsp Baking Powder
- 1/4 Cup Milk
- 2 Tbsp Unsalted Butter melted
- 1/2 Tsp Vanilla Extract
- Pinch of Salt
- Pinch of Lemon Zest
- 1/4 Cup Fresh Blueberries
- Sparkling Sugar for garnish
- Baking Spray
In a medium bowl, combine the flour, sugar, salt and baking powder until well blended.
Whisk in the milk, butter and vanilla and mix until thoroughly blended and the batter is smooth. Stir in the blueberries and lemon zest.
Spray the mug with baking spray so that muffin does not stick to the mug. Pour in the batter and immediately cook on high for 2 minutes or until the muffin is cooked to your liking.
Sprinkle the sparkling sugar over muffin. Serve immediately with ice cream or let cool to enjoy for breakfast.
