This first weekend of July has been a whirlwind of a weekend. Getting chores done, grocery shopping, keeping the kiddos happy and occupied and an impromptu date night with the hubby. So much fun, but so so exhausting. For tonight’s dinner, I wanted something light, healthy and really, truly delicious. Man o man, did I get that in this salad.
I found this little gems lettuce at the local farmers market. Sometimes, waking around the market, a food, a color or even an aroma catches my eye and inspires me to create something. Last week, I was walking around the market over my lunch break and this gorgeous head of lettuce just caught my eye. The wonderful greens and purples just stood out to me. Before I knew it, my wallet was out and this lettuce was mine.
I had no idea what I was going to do with it (other than the obvious – eat it!) or what kind of salad I was going to make with it. But, tonight’s dinner loomed over me and then I just started grabbing items from the fridge.
Summer Berry Salad with fresh fruit such as strawberries, blueberries and apples dressed with a citrus vinaigrette.
- 1 Head of Lettuce The more colorful, the better.
- 4-5 Strawberries Diced
- Blueberries Handful
- 1/4 Cup Apples Diced
- 1/4 Cup EVOO
- 1/4 Cup Apple Cider Vinegar
- Kosher Salt To Taste
- Pepper To Taste
- 1 Tbsp Honey
- Lemon Zest To Taste
Mix the ingredients for the dressing in a medium bowl using a whisk or a spoon. Set aside.
In a large bowl add all the ingredients for the salad. When ready to serve, dress the salad with your dressing. Be careful not to overdress the salad. The dressing will probably make more than you need.

- Protein – chicken, steak, tofu
- Feta cheese
- Gorgonzola cheese
- Homemade croutons
