Baked Oatmeal

If you know me at all, then you know my love for baked oatmeal.  It’s my go-to breakfast…EVERY. SINGLE. DAY.  So, I guess you could say, I love it.  Yup.  I do.  I used to do cold cereal and milk every day, but, I like to think of baked oatmeal as a classier, more grown up version of just regular, old cereal.

Are you a breakfast person? I am.  I’ve always been a breakfast person.  In fact, I prefer a large breakfast and then smaller meals and snacks throughout the day and evening.  I’m also one of those people who could eat “breakfast food” for each and every meal and live out the rest of my life perfectly happy.  Is that weird? Probably.  Oh well.

Here is how I prefer my baked oatmeal:  Hot (piping hot – I mean why heat things up if it’s not piping hot) drenched with cold milk.  Ahhh.  Even writing this now, I can’t wait until tomorrow morning.  My other favorite way to have my baked oatmeal is with yogurt in the form of a parfait.  Sound strange?  Trust me…I promise you will love it this way.  Baked oatmeal, layered with simple, plain yogurt and topped with fresh fruit.  It’s wonderful.

Baked Oatmeal

This Lemon Blueberry Baked Oatmeal is simple and healthy and is the perfect addition to your breakfast routine.

INGREDIENTS
  • 1 1/2 Cup Quick Oats
  • 1/2 Cup Dark Brown Sugar
  • 1 Tsp Baking Powder
  • 1 Tsp Cinnamon
  • Kosher Salt Just a pinch
  • 1 Tsp Vanilla
  • 1 Egg
  • 1/2 Cup Skim Milk
  • 1/4 Cup Vegetable Oil
  • 1/4 Cup Fresh Fruit Any fruit of your choice
INSTRUCTIONS
  1. Pre-heat oven to 375 degrees.
  2. Grease a square pan.

  3. In a medium bowl, whisk together all the wet ingredients, (vanilla, egg, milk oil), except the fruit.

  4. Add all dry ingredients to the bowl. Mix well.

  5. Add your fruit to the bowl. Mix well.

  6. Spread evenly in your greased pan.

  7. Bake in the oven for 30-40 minutes.
